Super Corn Fritters

Ingredients

175g Flour
2 ½ tsp. Baking powder
½ tsp. Salt
5 Eggs, beaten

Instructions

Preparation Steps
  • Sift flour, baking powder and salt into a mixing bowl.

  • Add beaten eggs and Wattie’s Cream Style Corn and mix well. Fold in Wattie’s Whole Kernel Corn.

  • Heat a little oil in a frying pan. Drop spoonfuls (about ¼ cup) of fritter mixture into the pan. Cook over a medium heat for 3-4 minutes until bubbles appear on the surface of the batter. Turn and cook the other side for a further 2-3 minutes until fritters are golden and cooked through.

  • Corn Fritters can be served with:Grilled bacon rashers and COTTEE'S® Maple Flavoured Syrup

  • F. WHITLOCK® & SONS Tomato Chutney Sauce and sliced avocado

  • HEINZ® Tomato Salsa

  • Corn fritters can be frozen on trays then packed into plastic bags and sealed. To reheat wrap in foil and place in the oven until heated through.
