Zesty Pineapple Punch Cocktail

Ingredients

20mL Bitters, to taste
80mL Brown rum
40mL Gin
3 tsp. Chargrilled lime juice from 3 limes
1 Tbsp. Brown sugar
Ice cubes, to serve
Fresh mint leaves, to serve
Pineapple Juice, to serve
Sparkling Water, to serve

Instructions

Preparation Steps
  • Place a few drops of bitters in each glass and swirl around.

  • In a shaker add the brown rum, gin, lime juice, sugar, crushed pineapple and shake until the sugar dissolves.

  • Divide the liquid mixture among 2 glasses. Add ice, mint and fruit salad and top with pineapple juice to 3/4 full and then finish off with sparkling water. Garnish with an umbrella.
