Sticky Bourbon Pork Ribs

Ingredients

2kg Pork full rack ribs
1 Cup brown sugar, firmLy packed
4 Garlic cloves, minced
1/3 Cup HP SAUCE
1/2 Cup bourbon
1/3 Cup apple cider vinegar
40mL Sticky balsamic vinegar
20g Ground cinnamon
20g Ground ginger
Steak cut chips, to serve
Caramelised lime halves, to serve

Instructions

Preparation Steps
  • Make sure combi oven is on at 160oC. Cut ribs in half and season them. Place ribs into a chaffing or baking dish so they fit.

  • Whisk the sugar, garlic, ketchup, sauces, bourbon, vinegars, cinnamon and ginger in a bowl. Pour over the ribs, then cover with foil.

  • Roast ribs for 1.5 hours, then remove foil and cook, basting frequently, for a further 1.5 hours or until meat is tender and falling off the bone. Transfer ribs to a plate and cover loosely with foil to keep warm.

  • Place the roasting pan over medium heat and stir the cooking juices until they are reduced and syrupy. Pour sauce over ribs and serve with chips and 1 caramelised lime half.

  • Serving suggestion: Cut the ribs into individual pieces and serve as a share platter.
