Heat oven to 180ᵒC and spray baking casserole dish.
Heat oil in skillet over medium heat.
Cook rice, onion and capsicum in oil for 6 to 8 minutes, until rice is light brown and onion is tender.
Stir in corn and mix through the remaining ingredients, except the cheese.
Add to the casserole dish and sprinkle 1 cup of the cheese on top.
Cover and bake for 50 minutes, or until the rice is tender.
Sprinkle with the remaining 1 cup of cheese.
Bake uncovered for a further 2 to 3 minutes, or until the cheese is melted.
