Spanish Tuna Rice Bake

Ingredients

2 Tbsp. Vegetable oil
1 Cup long grain rice, uncooked
1 Medium onion, chopped
1 Small green capsicum
2 ½ Cups boiling water
1 Tbsp. Fresh coriander, chopped
1 tsp. Chilli powder
425g GREENSEAS® Tuna Chunks in Springwater
2 Cups of cheddar cheese

Instructions

Preparation Steps
  • Heat oven to 180ᵒC and spray baking casserole dish.

  • Heat oil in skillet over medium heat.

  • Cook rice, onion and capsicum in oil for 6 to 8 minutes, until rice is light brown and onion is tender.

  • Stir in corn and mix through the remaining ingredients, except the cheese.

  • Add to the casserole dish and sprinkle 1 cup of the cheese on top.

  • Cover and bake for 50 minutes, or until the rice is tender.

  • Sprinkle with the remaining 1 cup of cheese.

  • Bake uncovered for a further 2 to 3 minutes, or until the cheese is melted.
