Pear & Apple Crumble with Salted Caramel

Ingredients

1/2 Cup pure cream
Vanilla ice-cream, to serve


Crumble
1/3 Cup brown sugar
1 3/4 Cups rolled oats
50g Butter, chilled and chopped
1/2 Cup shredded coconut
3/4 Cup pecans, chopped

Instructions

Preparation Steps
  • Preheat oven to 180oC.

  • Place cream and topping in a large saucepan over medium-high heat. Cook, stirring occasionally, for 5 minutes or until smooth and simmering. Simmer 2 minutes and then stir in salt. Add apple and pear slices. Toss gently to combine. Spoon mixture into a deep 20cm-square (10 cup-capacity) baking dish.

  • To make the crumble place brown sugar and oats in a bowl. Using fingers, rub in butter until well combined. Add coconut and pecans and mix well. Sprinkle crumble evenly over apple mixture.

  • Bake for 25 minutes or until crumble is golden. Serve with ice-cream.
