Heat oil in pan and add diced onion and curry paste.
Cook until onion is browned and curry paste is fragrant.
Add in chicken and cook until browned.
Stir in juice (retained from apricot halves), chicken booster and tomato sauce.
Add in sliced green capsicum.
Mix together cornflour with a little water and stir in.
Cook for 5 minutes, add apricot halves and cook a further 15 minutes.
Serve with rice.
