Curry Apricot Chicken

Ingredients

2 tsp. Oil
150g Brown onion, diced
1kg Boneless chicken thigh, cubed
1 Tbsp. Chicken Booster
100g Green capsicum, sliced
10g Cornflour
200g HEINZ® Apricot Halves in Juice, retain 250mL juice
Rice, to serve

Instructions

Preparation Steps
  • Heat oil in pan and add diced onion and curry paste.

  • Cook until onion is browned and curry paste is fragrant.

  • Add in chicken and cook until browned.

  • Stir in juice (retained from apricot halves), chicken booster and tomato sauce.

  • Add in sliced green capsicum.

  • Mix together cornflour with a little water and stir in.

  • Cook for 5 minutes, add apricot halves and cook a further 15 minutes.

  • Serve with rice.
