Oven Baked Vegetarian Frittata

Traditional feta, crumbled 500g 1Kg 2Kg
Sundried tomatoes, chopped 300g 600g 1Kg

Method

  1. Preheat oven to 160°C (fan assisted). Heat a little olive oil in a pan. Cook the red onions over medium heat until soft. Set aside.
  2. Cook Wattie’s frozen Cross Cut Green Beans according to bag instructions. Divide evenly into greased baking dishes. Scatter over cooked red onions, crumbled feta and sundried tomatoes.
  3. Beat eggs and milk together. Season with salt and freshly ground black pepper. Pour into the prepared baking dishes. Bake for 45-60 minutes until egg mixture has set and top golden. Stand for 5 minutes before cutting to serve. (internal temp should be >74°C)
